Grease a large sheet of foil with oil. Place the salmon on the foil and sprinkle with the onion, capers, parsley, peppercorns and slices of lemon. Enclose the salmon in the foil and bake in a preheated 200'C oven for about 15 minutes or until the salmon is just cooked. The salmon can also be cooked on the hot plate of a barbecue or in a covered barbecue. Remove the salmon from the oven and transfer from the foil to a serving platter. Drizzle over some olive oil and lemon juice if desired and serve at once with more slices of lemon. Bon Appetit - Exec.Chef Magnus Johansson
