Title: Atlantic Salmon with Rocket
Categories: Entree Salmon
Yield: 4 Servings

6x160g fillets of Atlantic
  Salmon, all bones and skin
  Removed
  Salt and freshly ground
  Pepper
  Lemon juice
2bnRocket, washed, dried and
  Stems trimmed
  TO SERVE:
  Sauteed Zucchini with
  Oregano
  Stewed Potatoes with Onions
  And Tomatoes

Season the salmon with salt and pepper and sprinkle with lemon juice. Place under a griller and grill for 3 minutes on each side, or until cooked. Place some rocket leaves on each serving plate and arrange a piece of salmon on top. Spoon some Sauteed Zucchini with Oregano on top of the salmon and some Stewed Potatoes with Onions and Tomatoes to the side and serve at once. Bon Appetit - Exec.Chef Magnus Johansson
