Title: Salmon Steaks with Mustard Sauce

1ozButter
1tbOlive oil
4 Salmon steaks
1tbRed wine vinegar
1tbWholegrain mustard
3tbCreme fraiche
  Salt and freshly ground
  Black pepper

Heat the butter and oil in a frying pan. Add the salmon steaks and cook over a moderate heat for 12-15 minutes, turning occasionally until cooked through. remove from the pan and keep warm. Add the vinegar and mustard to the pan. Cook for 1 minutes, stirring well to deglaze the pan. Stir in the creme fraiche and season to taste and heat through. pour over the salmon steaks and serve immediately.
