Title: Lemon Sage Salmon

Yield: 4 Servings
1 1/2 | lb | Center-cut salmon fillet, |
Cut crosswise in 4 pieces, | ||
Piece cut crosswise in half, | ||
Bones removed 2 | ||
Tomatoes, each cut in 4 | ||
Thick slices 3 Tbsp | ||
Finely shredded fresh sage | ||
Leaves OR 2 tsp dried, | ||
Crumbled | ||
1/2 | ts | Salt |
Large | ||
Fresh lemon juice 2 Tbsp |
Garnish: fresh sage leaves
1. Turn on broiler. Spray broiler pan rack with nonstick cooking spray.
2. Put salmon on one side of sprayed rack and tomatoes on other side. Drizzle salmon with lemon juice. Sprinkle salmon and tomatoes with sage and salt.
3. Broil 3 to 4 inches from heat source 7 minutes or until fish is opaque in thickest part and tomatoes are hot. Serve garnished with sage leaves.
Serves 4.
