Title: Cooking Lite- Smoked-Salmon Sandwiches

Yield: 2 Servings
2 | oz | Smoked salmon |
1/3 | c | Tub-style light cream |
Cheese | ||
1 | ts | Lemon juice |
2 | ts | Chopped fresh dill |
Or 1/2 teaspoon dried dill | ||
2 | ts | Minced red onion |
4 | sl | Pumpernickel bread |
1 | oz | Per slice |
4 | sl | Tomato; 1/8 inch thick |
8 | sl | Cucumber; 1/8 inch thick |
1. Combine first 3 ingredients in a food processor; process until smooth. Spoon into a bowl; stir in dill and onion.
2. Divide salmon mixture evenly between 2 bread slices; top each with 2 tomato slices, 4 cucumber slices, and 1 bread slice. Store in small zip-top bags in refrigerator.
Yield: 2 sandwiches.
