Title: Judy's Old-Fashioned Salmon Loaf - Jean Carper

1 | cn | Salmon; 15 1/2 oz. |
1 | tb | Lemon juice |
1 | lg | Egg |
1 | Egg white | |
1 | c | Bread crumbs |
1 | c | Mashed potatoes |
1 | ts | Celery seed |
1 1/4 | ts | Paprika |
1 | ts | Yellow mustard |
1 | ts | Fennel seed -optional; |
Crushed | ||
1/2 | ts | Prepared horseradish |
Salt and pepper | ||
Vegetable cooking spray |
Preheat oven to 350.
Remove as much skin from the salmon as possible. Mix together all ingredients except cooking spray until well combined.
Spray a small loaf pan with cooking spray. Spoon the salmon mixture into the pan and bake, uncovered, for about 45 minutes.
