Title: Japanese Marinated Salmon Fillet

1 | lb | 3/4-in. thick salmon fillet, |

2 | tb | Reduced-sodium soy sauce |
1 | tb | Lemon juice |
1 | tb | Packed brown sugar |
1 | Clove garlic, minced | |
1/2 | c | Thinly sliced leek |
1 | md | Carrot, cut int 2x1/8-in. |
Strips (1/2 cup) | ||
2 | c | Hot cooked brown rice |
1. Arrange salmon skin-side-up in 8-inch square baking dish. Set aside. In 1-cup measure, combine marinade ingredients. Stir until sugar is dissolved.Pour marinade over salmon, turning salmon over once to coat. Cover dish with plastic wrap. Chill 1 hour. 2. Remove and discard plastic wrap. Heat oven to 375°. Arrange leek and carrot evenly on salmon. Cover dish with foil. Bake for 15 to 20 minutes, or until fish is firm and opaque and begins to flake. Serve with rice. Makes 4 servings.
