Title: Baked Peaches - Glorious Liqueurs

Yield: 6 Servings

6 Peaches, firm and ripe
16 Amaretti cookies, crushed
1tbSugar
1 Egg yolk
3tbAmaretto, divided
  Few drops peach schnapps
1tbUnsalted butter
1/3cHeavy cream

Preheat oven to 350. Butter a baking dish.

Halve peaches. Remove and discard the pits. Remove a bit of the pulp so each half has a little hollow.

Chop pulp; add crushed amaretti, sugar, egg yolk, 1 tablespoon amaretto and the peach schnapps, if used. Stuff peaches.

Place in baking pan and dot with butter. Bake until tender, about 30 minutes. Remove to serving platter. Combine remaining amaretto and cream to pour over peaches, if desired.
