Title: Basic Lemonade or Limeade Syrup

1 1/2cSugar 1 cup water
1pnKosher salt
3 Lemons or limes rinds; cut into strips, no piths
3/4cLemon or lime juice

In small saucepan, bring sugar, water, salt and rind to a boil. Lower heat and simmer 10 minutes. Cool and add juice. Strain and store in covered container in the refrigerator. Lasts 2 months. Makes 24 servings.

VARIATIONS USING THE SYRUP BASE

Lemonade or Limeade: Add 2 tablespoons of syrup to 8 ounces of chilled still or sparkling spring water. Stir. Instead of garnishing with a piece of mint or wedge of lemon, try a sprig of thyme.

Red, White and Blue Lemonade: In a small bowl, crush 2 ripe strawberries or 6 raspberries with a fork and stir in 2 tablespoons of lemonade syrup. Pour into a glass with ice, 5 blueberries and add 8 to 12 ounces of water. Stir.

Lemon Cream Soda: Add 2 tablespoons of lemonade syrup, 2 tablespoons of cream and 8 ounces of chilled sparkling water to a glass of ice. Stir.

Fruit Ade: If you favor a particular fruit with your lemonade or limeade syrup, add 2 tablespoons of fruit to every 2 tablespoons of syrup (or to taste) and store in the refrigerator.
