Title: Cranberry Baked Apples - Glorious Liqueurs

1 1/2 | c | Raw cranberries |
1/2 | c | Cranberry juice cocktail |
1/2 | c | Firmly packed light brown |
Sugar | ||
2 | tb | Cranberry liqueur, rum or |
Applejack | ||
2 | tb | Unsalted butter |
3" piece cinnamon stick | ||
6 | lg | Rome or other baking apples |
2 | tb | Sugar |
Whipped cream, for serving |
Preheat oven to 375F.
Combine cranberries, juice, brown sugar, liqueur, butter and cinnamon stick in pan. Bring to a simmer, stirring. Remove from heat and let stand 10 minutes.
While cranberries are cooling, core apples and place in a baking dish.
Stuff apples with half the cranberrie mixture; sprinkle with some of the sugar; repeat. Pour any remaining filling on and around apples.
Bake, uncovered and basting frequently, 45 minutes or until tender but still hold their shape. Cool to room temperature, basting once or twice with the sauce.
Serve with whipped cream, if desired.
