Title: Cranberry Liqueur #2

Yield: 1 Fifth

4cCranberries; one 12-oz bag
1cPure grain alcohol; and
1cWater
2cSugar; to 2 1/2 cups
1/2cWater

Version of Cranberria and Finnish Karp. Rinse and check cranberries; discard soft or spoiled berries.

Remove any stems. Chop very coarsely, a food processor does this quickly and easily. Place chopped cranberries in aging container.

Pour sugar over cranberries; pour liquids in next. Stir well with a wooden spoon. Cap and store in a cool, dark place. Stir once a week for 2 weeks. Let age for 8 weeks longer.

After initial aging, strain through a metal colander.

Discard cranberries. Return liqueur to aging container. Let age for 3 months longer. Restrain through a fine strainer or cloth to remove any particles or seeds from cranberries. Bottle as desired. Makes about 1 fifth, ready in 5 1/2 months.

Variations: Two cups of rum or 80-proof vodka may be substituted for the pure grain alcohol and 1 cup water in this recipe.

Sugarless Cranberry Liqueur: Substitute 1 cup apple juice concentrate for the sugar in the Cranberry Liqueur recipe. Proceed as directed. The "sugars" present will be the natural fruit sugars rather than the processed granulated sugars. Taste will be slightly more on the tart side but excellent overall.

Aging is decreased by 1 month.
