Title: Ginger Beer #1

Yield: 1 Batch

1 1/2lbWhite sugar
3ozGrated ginger
2 Lemons
2 Heaping teaspoons of strong yeast

Mix the sugar with the grated ginger. Grate the rinds of the lemons and add to the mixture. Place these ingredients in a large crock and pour 2 gallons of boiling water over them. When this cools to lukewarm, strain and add the juice of the lemons and 2 heaping teaspoons of strong yeast. Make the beer in the evening, let it stand over night, then pour into jars or tightly corked bottles in the morning.

Note: Obviously you cannot pour the mixture into tightly corked bottles. I believe the author means that you should tightly seal the jars or bottles after filling them. What the author leaves unsaid is how long to let the yeast work after sealing the containers. The mixture may or not blow up before serving so handle with care.
