Title: Herbed Tomato Juice

2 | ga | Tomatoes, ripe,peeled,and |
;quartered | ||
1 | c | Parsley (fresh), chopped |
1 | c | Basil (fresh), chopped |
1 | c | Onion, chopped |
1/2 | c | Celery, chopped |
1/2 | c | Sugar, or to taste |
2 | ts | Salt, or to taste |
Put all ingredients together except sugar and salt. Cook in a large kettle on medium heat until tomatoes are soft. Stir often--do not burn. Remove from heat and put a cup or so at a time into blender container. Blend until smooth. Pour out into a large clean container. Continue to blend batches until all of mixture is blended. Add sugar and salt to taste. Stir well. Put in clean, sterilized jars and refrigerate, freeze, or can (according to canning directions for tomato juice).
