Title: Minted Iced Tea

4 | c | Strong tea |
2 | c | Orange juice (fresh) |
1 1/2 | c | Sugar |
1/2 | c | Water |
2 | tb | Orange rind, grated |
1/2 | c | Fresh mint leaves, chopped |

Put tea and orange juice in a two quart pitcher. In a small saucepan, combine sugar, water and orange rind. Heat to boiling over high heat. Boil 5 minutes and remove from heat. Add mint leaves to hot mixture. Stir, then cover and let mixture cool to room temperature. Strain this mixture into the pitcher of tea and orange juice. Refrigerate. Serve with orange slices and fresh mint leaves, if desired. Makes about 1 1/2 quarts.
