Title: Mrs Beeton's Elderflower Cordial

900 | g | Caster sugar |
600 | ml | Boiling water |
30 | g | Citric acid |
1 | Lemon | |
10 | Elderflower heads, washed & drained |
Diluted with plenty of iced water, this makes a refreshing drink. Small quantities may also be used to flavour stewed fruit such as gooseberries.
Put the sugar in a large heatproof bowl. Add the boiling water and stir until all the sugar has dissolved. Stir in the citric acid.
Grate the lemon and add the rind to the bowl, then slice the fruit. Add the lemon slices to the bowl with the elderflower heads. Cover and allow to stand for 12 hours or overnight. Strain through muslin, bottle and store for about 1 month.
