Title: Pina Colada Cream Liqueur - Glorious Liqueurs

1 | c | Chopped fresh pineapple |

1/2 | c | Vodka |
1 1/2 | c | Light rum, divided |
1 | c | Canned cream of coconut |
1/2 | c | Sweetened condensed milk |
1/2 | c | Evaporated milk |
2 | ts | Coconut extract |
In a tightly closed Glass jar, steep the pineapple in the vodka and half the rum for 1 week. Strain, squeezing as much juice from the pineapple as possible.
Combine the pineapple liquid, remaining 1 cup rum and the rest of the ingredients in a pitcher. Pour the mixture, half at a time, into a blender. Cover and process on low speed until blended and smooth.
Serve the cream liqueur at once, over cracked ice or ice cubes. Or transfer the mixture to a tightly covered container and refrigerate for up to two weeks. Stir just before serving.
