1 | md | Pineapple |
1 | c | Barley |
1 | Cinnamon stick | |

3 1/2 | c | Brown sugar; packed Water |
This will take 4 days to prepare.
Pare pineapple; reserve peel. Chop pineapple and the core. Place pineapple, core, and peel in lg. glass crock or bowl. Add 6 cups of water. Let this mixture stand 48 hours.
Heat 6 cups of water, barley, cinnamon, and cloves to boiling; reduce heat. Cover and cook until barley is tender; about 1 hr. Drain well and rinse under running cold water. Stir barley, brown sugar, and 2 cups water into pineapple mixture. Let stand 48 hours.
Strain through cheesecloth and refrigerate until cold. Serve over ice, if desired.
