Title: Rich Rice Pudding - Glorious Liqueurs

1 | tb | Unsalted butter |
1/3 | c | Raw rice |
1 | qt | Milk |
1 | pt | Heavy cream |
1/3 | c | Sugar |
1/4 | c | Raisins |
6 | Egg yolks | |
2 | tb | Tuaca or other orange |
Liqueur | ||
1 | ts | Vanilla |
2 | tb | Sugar |
1 | ts | Cinnamon |
Saute the rice in melted butter about 1 1/2 minutes.
Add milk, heavy cream and sugar. Bring to a boil; reduce heat to low and simmer, stirring often, about 55 minutes. Add the raisins and cook another 5 minutes.
Beat egg yolks. Slowly beat in 1 cup of the hot rice mixture, then return to pan. Cook, stirring constantly, until pudding is creamy and thick, about 5 minutes.
Remove from heat; stir in liqueur and vanilla. Transfer to serving dish and serve warm or chill and serve cold topped with combined sugar and cinnamon.
