Crust | ||
1 | c | Vanilla wafer crumbs |
2 | tb | Sugar |
1/2 | c | Shredded coconut |
3 | tb | Butter |
Filling: | ||
1 | lb | Cream cheese |
4 | Eggs separated | |
1 | c | Honey |
1/8 | ts | Salt |
1/2 | ts | Vanilla |
1 | c | Heavy cream |
1 | c | Crushed fresh strawberries |
Topping: | ||
1 | c | Cream , whipped |
1/2 | c | Fine chopped walnuts |
Mix all crust ingredients with fingers or pastry blender. Pat into bottom of 9 inch springform apn.Bake 350 for 8 minutes and cool for 20 minutes.Beat cream cheese and yolks until smooth. Add honey, salt, vanilla and beat smooth and light. Whip cream and fold into mixture.Beat egg whites to stiff peaks and fold into mixture.Pour into pan. Drop berries in center of filling and swirl into mixture. Freeze 3 1/2 hours or longer.Remove cake from freezer and decorate top of cake with whipped cream and nuts.Let stand at room temperature 30 minutes before serving.The frozen cheesecake has the texture of ice cream.
