Title: Baked Apple Cheesecake

CRUST | ||
1 | c | Soft whole wheat breadcrumbs toasted |
1/4 | c | Quick cooking rolled oats |
2 | tb | Artificial Sugar |
3 | tb | Margarine |
FILLING | ||
1 | c | Unsweetened Apple Sauce |
1/2 | c | Quark |
1 | c | Cottage Cheese |
3 | tb | Chopped raisins |
1 | ts | Vanilla |
1 | Egg | |
3 | tb | Chopped dried apricots |
2 | tb | Artificial Sugar |
1. Crust: in a bowl combine bread crumbs, sweetener and rolled oats. With fingers, rub in margarine until blended and crumbly. Press onto bottom of 8 inch springform pan. Set aside.
2. Filling: In a large mixing bowl, combine cottage cheese, applesauce, cream cheese and egg. Beat until mixture is smooth and creamy.
3. Stir in raisins,apricots, vanilla and sweetener;mix until well blended.
4. Pour over prepared crust.
5. Bake in 350 degree F oven for 45 minutes or until cake tester comes out clean.
6. Let cool in pan or wire rack, then carefully remove to serving platter.
Each serving is 1/12 of cheesecake.
