Title: Blanche's Cheesecake

This Cheesecake recipe is the one by which I judge all others. It needs *no* crust of any kind, or topping either.

Preheat oven to 325 F.; grease a 9 or 10 inch spring pan.

A: 1 lb creamed cottage cheese : 1 lb cream cheese B: 1 1/2 cups sugar : 4 eggs C: 3 tbsp corn starch : 2 tbsp lemon juice : 1 tsp vanilla extract D: 1 stick melted butter : 1 pt sour cream

Beat A, high speed, 'til blended. Add B, beat low speed. Add C, continuing low speed. Add D, beat low speed 'til *thoroughly* mixed.

Pour in greased spring form pan.

Bake at 325 F. for 70 minutes.

Turn off the oven. Leave in oven at least 2 hours after baking time is completed.

Chill before serving.
