Title: Cranberry Cheesecake

2 | 8 oz. pkgs cream cheese | |
1/2 | c | Sugar |
1/2 | ts | Grated orange rind |
1/2 | ts | Vanilla |
2 | Eggs | |
3/4 | c | Chopped cranberries divided |
1 | 9" graham cracker crust |
Mix cream cheese, sugar, peel and vanilla at medium speed with electric mixer until well blended. Add eggs; mix until blended.Stir in 1/2 cup of the cranberries.
Pour into crust. Sprinkle with remaining 1/4 cup cranberies. Bake at 350F, 40 minutes or until center is almost set, Cool. Refrigerate 3 hours or overnight. Garish with cranberries, mint leves and orange peel.
