Title: Evera ( Portugese ) Cheesecake

1 1/4 | c | Flour |
2 | tb | Butter |
2 | Eggs | |
1/2 | c | Water |
1 | ts | Salt |
Filling: | ||
28 | oz | Goat cheese |
2 1/2 | c | Sugar |
1 | Whole egg | |
8 | Egg yolks | |
1 | ts | Cinnamon |
1 | tb | Flour |
Mix all crust ingredients by hand to form a nonsticky dough, shape into a ball and sprinkle with a bit of flour. Roll out on a floured surface and roll 1/2 inch thick. turn over and roll out 1/4 inch thick. Brush dough with some butter, sprinkle with a bit of flour. Use a round 9 inch springform bottom; place over dough and cut out circle with knife. Reassemble pan and carefully place dough round into bottom of the springform pan. for filling. Beat goat cheese to make smooth and lump free. Stir in butter, flour, sugar and cinnamon. Add egg and yolks last and mix well. Pour filling over crust and bake 350 for about and hour or until set. May also be prepared for 6 individual cheesecakes.
