  Graham Cracker Pie Crust, 9

2 1/2lbCream Cheese -- softened
1 3/4cSugar
3tbFlour
1 1/2tsGrated Orange Zest
1 1/2tsGrated Lemon Zest
1/2tsVanilla
5 Eggs
2 Egg Yolks
1/4cHeavy Cream
  Filling-----

Preheat oven to 350. Bake graham cracker crust in bottom of 9-inch springform pan 8-10 minutes. Cool crust and butter sides of pan.

Preheat oven to 500.

In a bowl, beat the cream cheese, sugar, flour, zests, and vanilla until smooth. Beat in the whole eggs and the egg yolks, one at a time, beating lightly after each. Stir in the cream. Pour the filling in the prepared pan and bake for 12 minutes. Reduce heat to 200 and bake the cheesecake for 1 hour more. Let the cheesecake cool in the pan on rack, chill overnight, and serve.
