BLEND BUTTER, FLOUR, AND SUGAR. ADD EGG YOLK AND VANILLA. BLEND TOGETHER. LIGHTLY GREASE AND FLOUR SPRING-FORM PAN. PAT 1/3 DOUGH ONTO THE BOTTOM-BASE. COOK 10 MINUTES IN A PREHEATED 400 DEGREE OVEN. ATTACH SIDES OF PAN. PRESS REMAINDER OF DOUGH ONTO SIDES. SET ASIDE...
(FILLING): 2 1/2 lb CREAM CHEESE 2 tb FLOUR 1 tb VANILLA 1/2 c HEAVY CREAM 1 3/4 c SUGAR 1/4 ts SALT 6 EGGS
BEAT CREAM CHEESE UNTIL FLUFFY. ADD SUGAR, FLOUR, SALT AND VANILLA AND BLEND. ADD EGGS ONE AT A TIME AND BEAT WELL. BLEND IN CREAM. POUR INTO SPRING-FORM PAN. BAKE 10 MINUTES AT 475 DEGREES. LOWER OVEN TO 250 DEGREES AND BAKE ONE HOUR AND 15 MINUTES. REMOVE FROM OVEN. LET COOL BEFORE REMOVING SIDES.
NOTE: CAKE MAY SPLIT IN AN ELECTRIC OVEN THIS IS NORMAL. A GAS OVEN GIVES BETTER RESULTS THIS DOES NOT EFFECT THE TASTE. ALSO RUNNING A HOT KNIFE AROUND THE SIDES OF THE CAKE PAN WHILE THE CAKE IS COOLING WILL HELP TO KEEP IT FROM SPLITTING.
