2 | c | Graham crumbs |
1 1/2 | tb | Sugar |
Dash cinnamon | ||
1/2 | c | Melted margarine |
Filling: | ||
1 | sm | Pkg lemon jello |
5 | oz | Boiling water |
5 | oz | Cold water |
1/2 | lb | Cream cheese |
2 | tb | Vanilla |
1 | c | Sugar |
1 | 14 oz can evaporated milk | |
Chilled for 24 hours |
A collectors recipe. Blend crumbs with melted margarine, sugar and cinnamon. Press around sides and bottom of a 9 x 12 x 2 inch pan. reserve 1/2 cup mixture for topping. Dissolve jello in boiling water. add cold water. Mix and chill to 75 degrees ( use thermometer ). Do not let congeal! Cream, cream cheese, sugar and vanilla on medium speed for 3 minutes.Set aside. Beat chilled evaporated milk on high speed till peaks form. Immediately add jello and continue beating 1/2 minute more. add cheese mixture, blending in on medium speed just to incorporate. do not over beat. Pour into prepared pan Sprinkle with reserved crumbs. chill overnight.
