Title: Almond Cookies (Hsin Jen Ping)

Yield: 20 Cookies
1 1/2 | c | Flour |
1/2 | ts | Baking powder |
1/2 | c | Sesame seed oil |
1/4 | c | Ground almonds |
1/2 | ts | Almond extract |
| | Pinch of salt |
3/4 | c | Sugar |
1 | | Egg |
20 | | Whole blanched almonds |
Sift the flour and baking powder in a mixing bowl. Slowly add the oil and
mix well. Add the ground almonds, almond extract, sugar, salt and whole egg
and stir thoroughly. This should be a stiff dough, but if it is too stiff
to work with, add a drop of water at a time until the dough is pliable.
Form into small balls and press into cookies 1/2 inch thick and about 2 1/2
inches in diameter. PLace an almond in the center of each cookie. Place on
lightly greased cookie sheet and bake at 350 degrees in a preheated oven
for abut 15 minutes or until they are light brown in color. Cool and serve.
