3/4 | c | Butter or margarine; chilled and cut into pieces |

1/2 | c | Apple cider; chilled |
8 | lg | Granny Smith apples |
1/2 | c | Brown sugar; firmly packed |
1/2 | c | Currants |
1/2 | c | Walnuts, chopped |
1/3 | c | Butter or margarine; softened |
1 | lg | Egg |
1 | tb | ;water |
4 | (3-inch) sticks cinnamon; broken in half | |
Maple-Cider Sauce | ||
MAPLE-CIDER SAUCE | ||
2 | ts | Cornstarch |
1 1/2 | c | Apple cider |
2/3 | c | Maple syrup |
1/4 | c | Brown sugar; firmly packed |
1/4 | c | Fresh lemon juice |
Combine flour and salt; cut in butter and shortening with pastry blender until mixture is crumbly. Sprinkle cider, 1 tablespoon at a time, evenly over surface; stir with a fork until dry ingredients are moistened. Shape into 2 (1/2- inch-thick) squares; cover and chill.
Core each apple, leaving 1/2 inch intact on bottom. Peel top two-thirds of each apple; set apples aside.
Combine sugar, currants, and walnut; stir in softened butter, blending well. Spoon evenly into each apple.
Roll pastry squares to 1/8-inch thickness on a floured surface; cut each square into four (7-inch) squares.
Press 1 pastry square around each apple; remove excess pastry from bottom so apple will sit level. Roll pastry scraps, if desired, and cut into leaf shapes.
Combine egg and water, beating lightly with a fork. Brush over apples, and attach leaf shapes, if desired.
Place a cinnamon stick half in top of each apple to resemble a stem. Place apples in a lightly greased 15" x 10" x 1" jellyroll pan.
Bake at 375 F degrees for 40 minutes. Pour Maple-Cider sauce over apples; bake 15 additional minutes or until apples are tender. Place apples on a serving plate; spoon sauce around apples. Yield: 8 servings.
Note: Serve Maple Whipped cream with the apples. To make it, combine 1 cup whipping cream and three tablespoon maple syrup in a medium bowl, and beat at high speed with an electric mixer until soft peaks form. Maple-Cider Sauce:
Combine cornstarch and cider in a saucepan, stirring until smooth; add maple syrup and remaining ingredients. Bring to a boil over medium-high heat; boil 1 minute. Yield: 2 cups.
