Title: Arizona Sunrise-Sunset Citrus Pie

1 | 9" unbaked crust | |
3 | Eggs -- separated | |
14 o | z Eagle sweetened conden. | |

2 T | B Flour | |
2 t | s Lemon or orange zest & peel | |
1 | /3 c | Lemon juice |
1 3 | /4 c | Whipped topping -- thawed |
11 o | z Mandarin oranges -- drained | |
1 | /4 c | Orange marmalade |
Heat oven to 425 degrees. For crust, prick bottom and sides thoroughly with fork (50 times) to prevent shrinkage. Bake at 425 degrees for 10 minutes. Remove from oven. Reduce oven temp to 350 degrees. For sponge layer: combine egg yolks, sweetened condensed milk, flour, lemon zest and lemon juice in large bowl. Beat at low speed of electric mixer until well mixed. Beat egg whites until stiff, but not dry. Fold into lemon mixture. Pour into hot, baked pie shell. Bake at 350 degrees for 25 minutes or until set. Cool to room temp. For topping, spread whipped topping over sponge layer. Arrange orange slices over topping in a "wreath" about one inch from edge of pie. Warm orange marmalade. Stir in about 1/4 t lemon juice. Spoon over oranges. Refrigerate or serve at room temp. Recipe By : Gigi
