Title: Aussie Chocolate Damper

500 | g | Muntharies, [*] thawed. |
Brandy, to cover muntharies. | ||
200 | g | Flour, self-raising |
5 | g | Salt |
70 | g | Cocoa |
100 | g | Sugar |
250 | g | Milk |
300 | ml | Cream, whipped. |
Poach muntharies in brandy for 2 minutes. Cool.
Sift flour, salt and cocoa into a bowl. Add sugar. Add sufficient milk to make a managable dough.
Line base and bottom half of four terracotta pots with foil and add a loosely-drained tablespoon of stewed muntharies to each pot. Divide damper mixture equally and add to each pot. Bake in preheated 200^C oven for 15 to 20 minutes. Baste with a little milk during cooking.
Cool, up-end on to serving plates and garnish with remaining poached muntharies and whipped cream. Serves 4.
