125 | g | Butter |
90 | g | Sugar, castor |
1 | Egg | |
250 | g | Flour, self-raising == VARIATIONS ==- |
2 | tb | Coconut, desiccated -OR- |
90 | g | Sultanas/mixed dried -OR- fruit/cherries/currants |
2 | tb | Rind, lemon or orange -OR- |
90 | g | Nuts, mixed -OR- crushed |
2 | tb | Cocoa -OR- if using cocoa, then omit two tb |
Cream butter and sugar. Add egg and beat well. Add shifted flour to mixture and turn onto a floured board. Knead lightly.
Roll out and cut, or alternatively rill into balls, or place dessertspoons onto a greased tray.
Bake in moderate oven [180-200^C] for 10-12 minutes.
VARIATIONS:- Any of the -OR- ingredients can be added to the basic biscuit mixture.
Before cooking, biscuits can be rolled in sugar, rolled into balls and topped with jam or rolled in cereal flakes. After cooking they may be joined together with mock cream or iced with chocolate or lemon icing.
