Title: Basket Cake [Fruit] Boiled

4 | c | Fruit, mixed, originally 2 cups of... |
1 | c | Coconut, dessicated OPTIONAL- |
5 | oz | Margarine |
1 | c | Sugar |
2 | ts | Mixed spice |
2 | Eggs | |
1/4 | ts | Bicarbonate of soda |
1 1/4 | c | Flour, plain |
1 | c | Flour, self-raising |
1 | c | Water |
1 | ts | Essence, vanilla |
1/2 | c | Wine |
Place fruit, water, margarine, sugar and spice in a saucepan. Boil for 3 minutes. Allow to become almost cold, add soda to beaten eggs and stir into mixture. Add flours etc and mix well.
Place in round or square cake tin at about 160^ [electric] for about 1 1/4 hours, depending on your stove. One needs to regulate their own ovens to suit their cakes.
