Yield: 12 Pancakes

1cMinced cooked beets
2tbCornstarch
4 Egg yolks, beaten
3tbHeavy cream -=OR=-
3tbUndiluted canned milk
1/2tsSugar
1tsSalt
1/2tsNutmeg
  Fruit marmalade or
  . preserves

1. Combine all ingredients, except marmalade. Cook as for pancakes in a hot buttered skillet.

2. Serve with preserves or marmalade.
