Title: Best Loved Lemon Bars

Yield: 18 Servings
1/2 | c | Butter or margarine softened |
1/8 | ts | Salt |
1/4 | c | Powdered sugar |
1 | c | Flour |
2 | Eggs, slightly beaten | |
1/2 | tb | Grated lemon or orange peel |
2 1/2 | tb | Lemon juice |
1 | c | Granulated sugar |
2 | tb | Flour |
Powdered sugar |
Preheat oven to 350 F.
Blend butter, salt, 1/4 cup powdered sugar and 1 cup flour to make soft dough. Press evenly into ungreased 8x8 inch pan. Bake 15 go 20 minutes until golden.
Meanwhile, combine eggs, lemon peel, lemon juice, sugar and 2 tb flour and blend until smooth. Pour over baked crust. Reduce heat to 325 F and bake 25 minutes until firm. Cool. Dust with powdered sugar and slice into bars.
