2 | c | Sugar [large] |
3/4 | c | Boiling water |
2 | Egg whites | |
1/4 | ts | Cream of tartar |
Let the sugar dissolve in water, then boil the syrup until it will form a soft ball when a little of it is dropped into cold water and then rolled between the fingers. Do not stir the syrup until it comes to the boil.
When the sugar is boiling whip the whites of eggs to a stiff froth and when the syrup isw ready pour it in a fine stream on the whites of the eggs whipping them well all the time.
Continue beating until the icing is thick and smooth then add any flavouring desired. Spread on one half biscuit and put the other half on top. Traditional AUSTRALIAN COOKING - 641.5994
