Title: Blueberry Flummery

Yield: 4 Servings

2tbCornstarch
1/2cSugar
1 1/2cWater
2cFresh or dry packed frozen
  Blueberries, rinsed, drained
1 Grated rind and juice of
  One lemon
GARNISH
  Twist of lemon peel
  Thick cream

Combine cornstarch and sugar. Stir in water, blueberries, lemon rind and juice. Cook over low heat while stirring until flummery bubbles and thickens.

Spoon into sherbet glasses and chill.

Garnish with a twist of lemon peel.

Serve with thick cream.
