200gCastor Sugar [7oz]
200gFlour [7oz]
175gButter [6oz]
1tbLiqueur or brandy
5 Eggs, separated
1tsBaking powder
1pnSalt

"Mix the sugar with the egg yolks, then add the softened butter and the liqueur and beat until fluffy. Add the stiffly beaten egg whites and finally the flour mixed with the baking powder and salt. Bake this paste in well-greased patty tins in an oven preheated to 190^C/375^F, for about 25 minutes or until golden. The real St Gon‡alo cakes should have a phallic shape, which would demand elongated tins, but obviously any patty tins will do."

"Many popular saints' days are celebrated at times coinciding with ancient fertility rites. St Gon‡alo is one such saint, nobody seems to know why. "Christian-cum-pagan festivals celebrate Gon‡alo as a saint who finds husbands for old maids. A pilgrimage, a noisy fair, dancing, singing and eating [of suggestive-looking cakes] are all part of the feasts."
