Title: Breadfruit Pudding Ocho Rios

1 | lg | Ripe breadfruit |
2 | Firm ripe bananas | |
4 | md | Dasheens |
3 | md | Sweet potatoes |
1/3 | c | Brown sugar; or less * |
Salt to taste | ||
2 | c | Coconut cream |
3 | Ripe limes; seeded & wedged |
NB * Can be dark or light brown sugar.
Slice bananas thickly. Boil breadfruit, bananas, dasheens and sweet potatoes until each ingredient is just tender - do not overcook. Drain, peel if needed, and cut into uniform slices or cubes. Place in a sizeable heavy saucepan, sprinkle with brown sugar and salt to taste, then fold in coconut cream. Simmer over lowest possible heat, stirring with care occasionally, until ingredients are very tender yet still retain their shapes.
Serve warm, accompanying each portion with a lime wedge.
