Title: Brocco Squares

Yield: 4 Servings
2 | pk | Frozen broccoli |
3 | tb | Butter |
1/2 | c | Chopped onions |
1/4 | lb | Chopp mushrooms |
4 | Beaten eggs | |
1/4 | c | Bread crumbs |
1 | cn | Mushroom soup |
1/2 | c | Parmesan cheese |
1 | ts | Tarragon |
Salt and pepper to taste |
Cook broccoli until tender Grind broccoli in food processor or blender. Saute sonions and mushrooms in butter until onions are limp. Combine eggs with bread crumbs, 2 tbsp parmesan cheese, soup, tarragon and broccoli. Blend with the onion mixture and turn into greased 9 inch square baking pan. Sprinkle with remaining cheese. Bake at 325 degrees for 40 min or until set. Cool and refrigerate. Cut into 1 inch squares.
