Title: Brown Sugar Icebox Cookies

Yield: 3 Dozen
1 3/4 | c | All-purpose flour |
1/2 | ts | Baking soda |
1/4 | ts | Salt |
1/2 | c | Butter, softened |
1 | c | Packed brown sugar |
1 | Egg | |
1 | ts | Vanilla extract |
2/3 | c | Chopped pecans or flaked |
Coconut |
Combine flour, baking soda and salt; set aside. Cream butter and sugar. Add egg and vanilla; mix well. Gradually add dry ingredients. Fold in pecans or coconut (dough will be sticky). Shape into two rolls and place on waxed paper; wrap tightly. Chill 4 hours or overnight. Cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake at 375 for 7 - 10 minutes. Yield about 3 1/2 dozen
