1 | c | Margarine |
3 | oz | Chocolate, unsweetened |
4 | Eggs; beaten | |
2 | c | Sugar |
1 1/2 | c | Flour, all-purpose |
1 | ts | Baking powder |
1 | c | Pecans; chopped |
2 | ts | Vanilla extract |
4 | c | Marshmallows, miniature |
DELUXE ICING | ||
1 | c | Sugar |
3/4 | c | Milk, evaporated |
1/2 | c | Margarine |
2 | oz | Chocolate, unsweetened |
1 | lb | Sugar, powdered |
1 | ts | Vanilla extract |
Melt margarine and chocolate in top of double boiler; set aside. Combine eggs and sugar, beating well; add flour and baking powder, mixing well. Add chocolate mixture, pecans, and vanilla. Pour into two greased 13x9x2" pans and bake at 325 degrees for 30 minutes. Remove brownies from oven and cover top with marshmallows. Brownies may need to go back in oven long enough for marshmallows to melt. Frost with Deluxe Icing.
Deluxe Icing: Combine sugar, milk, margarine, and chocolate; cook over medium heat until soft ball stage (about 236 degrees). Add powdered sugar and vanilla. Beat well. Spread icing over marshmallows. Cool brownies and cut into squares. Yield: icing for 6 dozen brownies.
Note: Begin to prepare icing a few minutes before brownies are done so both will be hot at the same time.
