1 | c | Butter; or margarine |
3/4 | c | Brown sugar; packed |
3/4 | c | Sugar |
2 | Eggs | |
1 3/4 | c | Flour |
2 | c | Uncooked oats |
2 | ts | Ground cinnamon |
1 | ts | Baking soda |
1/2 | ts | Salt; optional |
1 | ts | Sugar |
1 | ts | Ground cinnamon |
Preheat oven to 375~. Grease a baking sheet. In a lg. bowl, beat together butter and sugars until light and fluffy (note - the tsp of sugar is used later). Add eggs and mix well. In a med. bowl, combine flour, oats, 1 tspn ground cinnamon, baking soda, and salt. Add to sugar mixture and mix well. Drop by rounded tspnfuls onto prepared baking sheet. In a small bowl, combine remaining tspnful of sugar and tsp of cinnamon; sprinkle lightly over each cookie. Bake 8 to 10 mins. Cool 1 minute before removing to cooling rack.
