Title: Champagne Ice

Yield: 2 1/2 quarts

1 1/2cSugar
3cWater
1 1/2tbLemon rind; grated
1/3cLemon juice; fresh
2 Bottles champagne;(75 ml ea)

Combine all ingredients, stirring well; pour into freezer container of a 1-gallon hand-turned or electric freezer. Freeze according to manufacturer's instructions.

Pack freezer with additional ice and rock salt, and let stand 1 hour before serving, if desired.
