SEASON: November through May

LOOK FOR: Large fruit, uniformly green, with rough, petal like indentations. Avoid fruit with cracks or dark brown skin.

TO STORE: If necessary, ripen cherimoyas at room temperature until they yield to gentle pressure. Refrigerate cherimoyas and use them within 1 to 2 days.

TO PREPARE: Wash the fruit; cut it lengthwise into halves or quarters. Serve as you would melon wedges. Discard seeds when eating.
