Title: Chewy Ginger Cookies

Yield: 4 Dozen
3/4 | c | Shortening |
1 1/4 | c | Sugar, divided |
1 | Egg | |
1/4 | c | Molasses |
1 | ts | Vanilla extract |
2 | c | All-purpose flour |
1 | ts | Ground cinnamon |
1 | ts | Ground ginger |
1 | ts | Baking soda |
1/2 | ts | Salt |
1/2 | ts | Ground cloves |
In a mixing bowl, cream shortening and 1 cup sugar. Add the egg, molasses and vanilla; mix well. Combine dry ingredients; add to creamed mixture and mix well. Roll into 1-in. balls; roll in remaining sugar. Place 1-1/2 in. apart on ungreased baking sheets. Bake at 375 degrees for 10 minutes or until lightly browned. Cool on wire racks. Store in an airtight container.
