Title: Chocolate Beet Cake

2 | c | Flour, all-purpose |
2 | ts | Baking powder |
1/2 | ts | Salt |
1/3 | c | Cocoa |
3 | Eggs | |
1 | c | Sugar |
1 | c | Beets; cooked, grated |
1/2 | c | Corn oil |
1/4 | c | Orange juice |
2 | ts | Orange rind; grated |
1 | ts | Vanilla extract |
6 | oz | Chocolate, semisweet morsels |
Sugar, powdered; optional |
Combine flour, baking powder, salt, and cocoa; set aside. Combine eggs and sugar in a large mixing bowl; mix well. Add beets, oil, orange juice, and orange rind to sugar mixture; beat well. Stir in flour mixture and vanilla, mixing well. Stir in chocolate morsels.
Pour into a greased 9" square baking pan. Bake at 350 degrees for 40 minutes or until cake tests done. Let cool 10 minutes in pan. Remove from pan, and cool completely on wire rack. Sprinkle with powdered sugar, if desired.
