Title: Chocolate Chip-Mint Cookies

3/4 | c | Butter (1 1/2 sticks) |
1/2 | c | Brown sugar (packed) |
1/2 | c | Granulated sugar |
1 | Egg | |
1 | ts | Vanilla extract |
1 | ts | Peppermint extract |
1 1/2 | c | Unbleached flour |
1/4 | c | Unsweetened cocoa |
1 | ts | Baking soda |
1/4 | ts | Salt |
1 | c | Chocolate chips |
Preheat oven to 350 degrees F. Lightly grease a cookie sheet. Cream together butter and sugars with an electric mixer at high speed. Beat in egg. Stir in vanilla and peppermint extracts. Sift together the dry ingredients and add this to the butter mixture along with the chocolate chips. Stir until weel combined. Drop by rounded teaspoons onto prepared cookie sheet. Bake 12 to 15 minutes. Transfer immediately to cooling rack.
