Title: Chocolate Mint Nanaimo Bars

3/4 | c | Butter or margarine, softened |
1/3 | c | Granulated sugar |
1/2 | c | Cocoa powder |
1 1/2 | ts | Vanilla extract |
2 | Eggs | |
3 | c | Graham crumbs |
1 1/2 | c | Flaked coconut |
3/4 | c | Chopped walnuts |
FILLING: | ||
1/3 | c | Butter or margarine, softened |
1 | pk | (99 gram) vanilla instant pudding |
3 | c | Sifted icing sugar |
1/3 | c | Milk |
Green food colouring | ||
TOPPING: | ||
3 | tb | Milk |
1 | c | Mint flavoured chocolate chips |
Stir 3/4 cup butter, sugar, cocoa, vanilla and eggs until well blended. Add graham crumbs, coconut and walnuts; mix well. Press firmly into aluminum

foil line 13x9 inch pan. Cream 1/3 cup butter in medium bowl. Mix pudding powder and icing sugar together. Add to margarine with 1/3 cup milk and beat until smooth. tint with food colouring, if desired. Spread finlling evenly over base and chill 15 minutes. Heat 3 tbsp milk in top of double boiler. Add mint flavoured chocolate chips and stir until melted. Spread quickly and evenly over top. Chill at least 2 hours before serving. Lift bar from pan by removing tin foil. Cut into bars. Store in airtight container in refrigerator. Makes about 4 dozen bars.
