Title: Chocolate Mint Wafers

Yield: 7 1/2 dozen

2/3cButter/margarine
1/2cSugar
1/2cSugar, brown; packed
1/4cMilk
  Eggs
2cFlour
3/4cCocoa, baking
1tsBaking powder
1/2tsBaking soda
1/4ts;salt
FILLING
2 3/4cSugar, powdered
1/4cHalf & Half
1/4tsExtract, pepermint
1/4ts;salt
  Food coloring, green

In a mixing bowl, cream butter and sugars. Add milk and egg; mix well. Combine dry ingredients; gradually add to creamed mixture and mix well. Cover and chill 2 hours or until firm. Roll chilled dough on a floured surface to 1/8" thickness. Cut with a 1 1/2" cookie cutter and place 1 inch apart on greased baking sheets. Bake at 375 degrees for 5-6 minutes or until edges are lightly browned. Remove to wire racks to cool completely. Combine filling ingredients; spread on half of the cookies and top with another cookie.
