Title: Chocolate Puddings with Honey Sauce [Aww/apr89]

6 | Eggs, separated. | |
1/3 | c | Castor sugar. |
1/4 | ts | Almond essence |
3/4 | c | Breadcrumbs, stale white. |
3/4 | c | Almonds, ground. |
100 | g | Chocolate, dark, melted. |
2 | tb | Castor sugar, extra.] |

2/3 | c | Cream. |
2/3 | c | Milk. |
1 | tb | Honey. |
125 | g | Chocolate, dark, grated. |
Grease six 1-cup capacity pudding moulds, coat inside of moulds lightly with sugar; shake away excess sugar.
Beat egg yolks, sugar and essence in a small bowl with electric mixer until thick and creamy. Transfer mixture to a large bowl, stir in breadcrumbs, almonds and chocolate.
Beat egg whites in large bowl with electric mixer until soft peaks form. Gradually add extra sugar, beat until dissolved. Gently fold egg white mixture into chocolate mixture.
Spoon mixture into the prepared moulds, cover each moulds with a piece of greased foil. Stand moulds in baking dish with enough water to come halfway up sides of moulds. Bake in moderate oven for about 1 hour, or until puddings are firm. Stand puddings in moulds for 5 minutes, turn out. Serve puddings with honey sauce.
HONEY SAUCE: Combine all of the ingredients in a medium saucepan, stir over low heat until chocolate is melted and sauce is smooth.
Serves 6.
